How to Make Sushi

Sushi is a delectable Japanese food full of nutrients. Making sushi can be difficult initially. Over time the individual’s technique improves, and the recipe will resemble restaurant quality.

Americanized sushi is slightly different from Japanese sushi. In western countries, the California Roll is popular. The article will discuss how to make the California Roll and Spicy Tuna.

Sushi Recipes

The following are two sushi recipes.  The first one will cover the basic California roll and the second will cover spicy tuny.

Making California Rolls

To begin making California rolls, the preparer needs a bamboo sushi roll mat, a cutting board, a sushi-grade knife, a utensil, such as a wood spoon or plastic rice paddle for spreading rice and plastic wrap.

Prepare the Japanese rice 2 hours prior to preparing the sushi rolls. Japanese rice is a medium grade and is sticky. Sticky rice is necessary for sushi to remain intact.

Making Sushi Rice

To begin rice preparation, begin by combining 6 tablespoons of rice vinegar, 2 tablespoons of granulated sugar and 2 teaspoons of salt in a medium sauce pan. Heat the mixture until the sugar dissolves. Remove the mixture from the heat and place it to the side for later use.

Rinse the rice with water in a colander. Place the rice in a sauce pan with water and allow the rice to soak for 30 minutes. Drain the rice in a colander. Transfer the rice to the rice cooker or another sauce pan.

Prepare the Japanese rice in a rice cooker or by another method. Combine 3 cups of Japanese medium grain rice and 4 cups of water to prepare the rice. If preparing in a saucepan, bring to a boil, reduce heat and steam covered for 15 minutes. Then turn the heat off and let the rice sit covered for another 15 minutes.

Place the rice into a large bowl after the rice is prepared. Using a plastic rice paddle, fluff the rice grains. Take care not to stir the rice, as it will crush the grains. Do not refrigerate the rice. If the preparer does not use the rice immediately, cover it with a damp cloth to retain the moisture.

Next, drizzle the rice vinegar mixture over the rice. Continue the folding process as the mixture is drizzled over the rice. Drizzle the mixture onto the rice to lightly cover it. Do not drench the rice. Place the rice mixture on a large sheet of aluminum foil to cool.

Preparing Sushi Rolls

To prepare the sushi, gather the following ingredients: Five sheets of sushi nori, 1 large cucumber, fresh lemon juice, 2 to 3 avocados, cooked crab, Wasabi, soy sauce, and pickled ginger.

First prepare the cucumber. The recipe calls for the cucumber to be washed, peeled and seeded. Once peeled and seeded, then cut the cucumber into long, slender pieces.

Pit and peel the avocado. Cut the avocado into long, slender strips. Squeeze fresh lemon juice over the avocado to prevent discoloration.

Prepare the crab by removing the meat from the shell. Alternatively, if the crab is already prepared, store it on the plate along with the avocado and cucumber until it is ready for use. These items may be refrigerated until the preparer is ready to make the sushi, if necessary.

The ingredients for the sushi roll are now ready to be assembled. Place the cutting board on the counter. Then place the Bamboo mat on top of the cutting board. The mat’s bamboo strips should face horizontally away from the preparer’s body.

Place the plastic wrap on top of the Bamboo sushi roll mat with the shiny side facing downward.

Next, place a sheet of nori on top of the plastic wrap. Obtain approximately 1 cup of the rice mixture and spread the rice mixture on top of the nori. One inch of nori should remain uncovered at each end. If the rice is sticking to your hands, it helps to wet your hands with cold water prior to preparation.

Locate the center of the rice and place the cucumber and avocado strips down the middle vertically. Top the mixture with crab meat.

To prepare an “Inside-Out” roll. Begin by placing the nori on the plastic wrap. Then, spread the rice mixture. Sprinkle the rice with sesame seeds or poppy seeds. Place another sheet of plastic wrap on top of the rice. Lifting the bottom sheet of plastic wrap, flip the mixture until the rice is facing the Bamboo sushi roll mat. Remove the top layer of plastic wrap to reveal the nori. Continue constructing the roll as listed above. Once all the ingredients are in place the sushi is ready to be rolled.

Rolling the Sushi Roll

Begin by lifting the bamboo sushi roll mat and plastic wrap at one end to start the roll. Peel back the plastic wrap and bamboo sushi roll mat as the process continues to avoid having either incorporated into the sushi roll. Make certain the roll is firm by using pressure to complete the roll.

Continue the rolling process until 1 to 2 inches of the nori is exposed on the top. A dab of cold water can be placed on the one inch border of the nori to assist with the rolling process. Continue the process to complete the sushi roll.

When the roll is complete, place plastic wrap around the roll until the preparer is ready to cut the roll. The roll can be refrigerated while preparing the other rolls.

Cutting the Sushi Rolls

To cut the sushi rolls, remove the plastic wrap. Place the roll on a cutting board and make the first cut down the middle. Each piece can then be sliced down the middle until the desired number of pieces are reached. Wet the knife between cuts to avoid rice accumulation.

Serve the California rolls at room temperature on a serving platter or sushi plate with chopsticks. The cut end should face the presenter or recipient. California rolls can be enjoyed with pickled ginger, wasabi, and soy sauce.

If the preparer desires to use raw fish, make sure the fish is sushi grade and is either frozen or soaked in vinegar to kill parasites. Ideally, the fish should be prepared by a professional for maximum safety. However, if the preparer decides to try the raw fish, be certain to use the aforementioned safety precautions. The crab can then be substituted in the recipe with salmon, tuna, and other delights.

Spicy Tuna Recipe

To prepare Spicy Tuna, the recipe is the same as the California Roll except tuna replaces the crab. Spicy Tuna recipes are prepared with the Inside-Out method. When the roll is prepared, dab a bit of spicy mayonnaise mixture onto each cut piece and serve.
